SPICES PLANTS

Cardamom

Cardamom Plant

Cardamom ( Elettaria) is native to the evergreen rainy forests of Western Ghats in South India and is known as the Queen of Spices. Cardamom is mainly used for flavouring various preparations of food, confectionery, beverages, liquors and used in Ayurvedic medicines.

Dried Cardamom

Cardamom plants normally start producing yield after two years of planting. Picking is carried out at an interval of 40-45 days and the peak period of harvest is during October-November. Ripe capsules are harvested without delay to get maximum green colour during curing. After harvest, capsules are dried using dryer machines at 45o C for 11-12 hours. They are then sorted out according to size and colour quality.

Black Pepper

Pepper Plant

Pepper is also considered to be originated in the hills of South Western Ghats of India. Pepper has got rich preservative values and thus it is largely used in food industries. The black pepper plant is a woody climber and the harvested corns are dried to get the Black Pepper.

Dried Pepper

The preservative values of Black Pepper makes it the largely exported spice and thus it is known as “ Black Gold”.

Clove

Clove Tree

Cloves are the flower buds of the Clove Tree. Clove flower buds are harvested in their immature state and then dried to get the Cloves.

Dried Cloves

Whole cloves are shaped like a small, reddish-brown spike, usually around 1 centimetre in length, with a bulbous top. Cloves can be used whole or ground, and they have a very strong, pungent flavor and aroma.

Nutmeg

Nutmeg Tree

Nutmeg is a spice made from the seed of the nutmeg tree, an evergreen tree that is the source of two popular spices: Nutmeg and Mace. Nutmeg is the inner seed, while mace is the red, lace-like substance that covers the seed.
